When you are super busy, healthy eating seems hard, but it doesn’t have to be. With a little preparation - and some inspiration - you can eat healthy on the go, despite your busy schedule. 

 

Breakfast

It is the most important meal of the day. I recommend making a smoothie full of protein and healthy fats like chia or hemp seeds, avocado, almond milk, spinach, and almond butter. Check out my Energizing Smoothie recipe HERE.

 

Snack

An apple with 2 TBS of almond butter or a handful of walnuts with some berries is a perfect option to munch on. Measure these out and put them in plastic baggies at night or in the morning, so you can grab and go. 

 

Lunch

Protein and healthy fat are key. Opt for wild caught salmon and veggies with some avocado (easy to order at any restaurant in town) or pack your lunch and make a protein and veggie dish for dinner the night before and eat leftovers for lunch. My philosophy is to cook once, eat twice.

 

Snack

My favorite afternoon snack is an organic brown rice cake with half of a smashed avocado and sea salt. If you are avoiding grains, opt for 2 boiled eggs. A third option for an afternoon snack is to make my protein balls. Get the recipe HERE.

 

Dinner

The last meal of the day should be the lightest so I recommend a veggie stir-fry or a delicious salad with pumpkin seeds, avocado, cucumber and cauliflower. A great homemade dressing is olive oil, balsamic vinegar, mustard and sea salt. Just shake together in a mason jar and pour.
